Banana ice cream

When I get a craving for ice cream this is what I make. It's made from frozen bananas. I keep a big bag of bananas with their skin on in the freezer. I take one out about 1/2 an hour before I want to make it. Then I peel it and place it into my mini processor with a few tablespoons of water to make it easier to puree.


Today I flavoured it with some blueberries and strawberries, but I also eat it just on its own.

  1. Hi Maria, another one of my favourites is I use an orange. I peel and cut in half to remove seeds and through in to blender with a few frozen bananas a little bit of water and blend well its like a really thick smoothie very delicious on a hot day or night. I peel all my bananas and put them in a plastic bag in the freezer they take up less space, I use mine straight from the freezer and put them into my blender !

  2. My vegan daughter *invented* what she called "nice-cream" about 7 years ago. We do it similar to you, I don't add the water and I use a fork to beat, but I haven't tried adding fruit yet. It is really yum.
    I keep bananas in the freezer just for this.

  3. Sherrie, I am going to try your suggestion of peeling them first. I am just time poor with a 2 year old that shoving them straight in is easiest but I do admit they take up more room.

    Barb, how do you beat with a fork?? Isn't the banana too hard to do this?? You can flavour it with lots of things, some cocoa powder, some vanilla, mango, berries and like Sherrie said orange - hadn't thought of that one but I am going to try it.

  4. I must leave mine out longer than you then but they are not out long before I squish then beat with the fork.
    I don't have a blender and a fork is easier than the old hand beaters.
    I prefer leaving the banana in it's skin as I think they last longer and I have sometimes used them after 6 months and they have been fine. The ones I skin and put in bags don't last as long but I only use snaplocks.

  5. Barb I pull them out frozen solid and wait 30 min before slicing down the side with a knife and opening up the skin. Don't think I could use a fork unless they were softer than this.

    Another reason I leave in skin is I don't have to bother about putting them into a container or zip lock bag but I do admit they take up more room.
